New TCU-area Tex-Mex restaurant to open

Pegaso Mexican Diner, a Tex-Mex comfort food restaurant specializing in handmade enchiladas, will have its grand opening Aug. 19.

The new fast-casual eatery, which highlights vintage Fort Worth memorabilia, is located at 3516 Bluebonnet Circle near the Texas Christian University campus in Fort Worth. The restaurant is owned and operated by CEO/Partner Jay Coates and Chef/Owner Monica Greene, both of Dallas. With more than 40 years in the restaurant industry, Greene is most recently known for Monica’s Nueva Cocina and BEE Enchiladeriea and previously for Monica’s Aca Y Alla in Deep Ellum.

“There was significant thought and care in choosing the location of our flagship restaurant,” said Coates. “The city of Fort Worth has done an incredible job with the projects around town and once we were introduced to the community surrounding Bluebonnet Circle, we knew this was where Pegaso would create its first hoof print.” -Betty Dillard bdillard@bizpress.net
