This is not owner Jeremiah Miranda’s first rodeo. First, he opened Trophy Club on 6th Street in Austin, and followed it up with a Trophy Room location in Dallas on McKinney. Now, he and operations oartners Niko and J. D. Ybanez who severs and GM), are set to open three new concepts in West Seventh on Bledsoe.
Trophy Ranch will take up residence in the strip next door to Rodeo Goat, with Club Roar − an attached back club room, which will open only on Friday and Saturday and feature a speakeasy atmosphere. Roar will also offer a limited selection from the Trophy Ranch menu. High Tide, on the other hand, will serve classy craft cocktails.
With ample pub-grub in the district, the menu will stand out with upscale offerings. Trophy Ranch will add a creative chef-driven menu by Chef Norman Grimm. Try the Steak Tartare served with a four minute egg yolk and crispy bits, or Lamb Lollipops served with apricot mint glaze and a side of Greek tzatziki sauce for starters. Or fill up with the PBJ Cheeseburger made from local Kobe beef, topped with peanut butter and jelly, cheddar cheese and fried jalapenos. Other options include Shrimp and Grits with asparagus tips, or an unexpected Lobster Roll with tarragon sauce.
They plan to be open for dinner only beginning around 4 p.m. and stay open until the wee hours. They plan to offer a lunch menu in the near future.
Buffett-style brunch will be available on Saturday and Sunday and will include Bellini’s, Bloody Marys and Mimosas. They also have a pet-friendly patio to dine with your best-friend. “We have stepped up our game with our newest installation,” Ybanez says. “We have a highly trained staff and want our customers to know they will be taken care of.”
Trophy Ranch and Club Roar are a combined total about 6,500 square feet (Club Roar covers 2,000 square feet of that total). Trophy Ranch is set to open in late December and Club Roar in January. High Tide will be about 800 square feet and should open in February.
They have game day coverage on twelve 60 inch flat screens with arcade-style games like basketball and skee-ball. Expect a fun interior design complete with X-Box One gaming set-ups, animal mounts and a shiny Airstream trailer, which has been cut in half and attached to one wall so it feels like ordering from a food truck. With a late-night menu that runs from 10 p.m. – 2 a.m. it will add to the local nightlife options.
